Grandma always used to say “Eat your vegetables!” And she was right. Vegetables contain the right vitamins and nutrients to help sustain a healthy body. But how do you make vegetables into something delicious?

Easy, you make a quiche or a salad unlike any other. With this in mind, for the past couple of months at Fountain House, a clubhouse for peers with mental health issues in midtown Manhattan, City Voices’ director Dan Frey and editorial board member Ellen Stoller worked with clubhouse members to create mouthwatering vegetable quiches and to-die-for salads!

We chopped. We peeled. We poked holes in our crust. We steamed, baked and sautéed. And the results were pure deliciosity!
